Homemade Mayo

Considering the long list of ingredients seen on the Mayonnaise jar I was surprised when I learned how easy it is to make it.
Mayo is basically an emulsion of egg and oil.
Who knew?
Avoiding the sugar and bad oils had me thinking Mayo was not an option.
Not so young grasshoppah!
Delicious, flavorful, smooth good-for-me Mayo is mine!

This basic has the potential to turn into many desirables once on the verboten list such as:
Ranch Dressing
Aioli
Chicken Salad
Tuna Salad
Deviled eggs
Egg salad

I would post a photo but we ate it all.
